Dish Up Some Fun – and Great Food, Too Grand Junction is known for fine wines that go hand in hand with culinary creations like those of Chef Wayne Smith, who stars in a series of new videos on the Visit Grand Junction website. In one, Smith shows you how to put one of Grand Junction's treasures to use and bake the perfect peach pie. (Hint: Use tapioca pearls instead of flour to thicken the filling.) In the other, he offers pointers for pairing wine with food and tips for experimenting with these combinations. "Sometimes we have to play with our food," Smith says, adding the best way to learn about wine is from the people who make it. Grand Junction is the core of Colorado's Wine Country, with wineries and vineyards producing everything from merlot to mead. After watching Smith's handiwork, try your own hand at fixing some of his dishes. His recipes for Colorado Lamb Cutlets with Rosemary Garlic Cream Sauce, Maple-Glazed Bacon-Wrapped Scallops and Peach Melba are on the site, along with detailed instructions that can be printed on recipe-size cards.
