Chef Wayne Smith is cooking things up in Colorado, and not only in restaurants. Born in Biloxi, Miss., he went from working in the dish room of a Rocky Mountain resort to running restaurants without any formal training.
Smith, 42, has had restaurants in Grand Junction, Durango and Hawaii, and now teaches culinary arts at Mesa State College's Colorado Culinary Academy. He has been part of the faculty since the school's inception in 1998.
Smith has a special interest in ethnic foods – Mexican for its fresh ingredients, French for its respect for flavors and Middle Eastern, too. You can learn a lot about people by eating their food, Smith says. "Food is like music. It is a universal language."
