Makes 6 large muffins, perfect portions!
¼ cup veg. oil or applesauce
¼ cup brown sugar
1 egg
Beat oil, sugar & egg until glossy.
Add the next 5 ingredients and mix well.
½ cup milk
1 ½ cups quick oats
1 tsp. baking powder
¼ tsp. salt
¼ tsp. cinnamon
1 apple, peel & grate
1 cup craisins
½ cup chopped nuts
Fold in fruits and nuts.
Pour into a greased loaf pan or muffin tin.
Bake for about 30 minutes at 350.
Serve warm with a little milk.
