Fiesta Corn Salad - Marilyn Montoya

Ingredients:

  • 1 can of Mexican corn    
  • 1 can of whole kernel corn    
  • 1/2 cup of chopped red onion    
  • 1/2 cup of chopped green pepper    
  • 1 cup of shredded cheddar    
  • 1 cup of mayo    
  • 1 bag of Fritos   

Instructions:

  1. Drain the corn and mix with the other ingredients except the Fritos.   
  2. Crush the chips and put them on top of the salad right before serving.
  3. Enjoy!!!
