Cinnamon Roll Cookies

Ingredients:

Filling:

  • 6 tbsp butter

  • 3/4 cup brown sugar

  • 1.5 tbsp cinnamon

Dough:

  • 2 sticks unsalted butter

  • 1 & 3/4 cup sugar

  • 2 eggs

  • 2 tsp vanilla extract 

  • 3 -3.5 cups flour

  • 1 tsp baking soda

  • 3/4 tsp salt

  • 1.5 tsp cream of tartar

 

Instructions:

  1. To make the filling, combine 6 tbsp butter, cinnamon, and brown sugar. Once mixed, form into small marbles and place on a pan to freeze.

  2. While those are freezing, combine the butter, eggs, sugar, vanilla, baking soda, salt, cream of tartar, and flour. I recommend starting with 3 cups of flour and fully mixing before adding more.

  3. Once the dough is formed, fold in cinnamon marbles.

  4. In a separate bowl or plate, create a cinnamon sugar mixture to roll the dough through. Ball the dough into spoon-sized pieces and roll them through the mixture, then place on your cooking sheet.

  5. Cook at 350°F for 10-12 minutes, or until golden brown.
