Cinnamon Roll Cookies
Ingredients:
Filling:
-
6 tbsp butter
-
3/4 cup brown sugar
-
1.5 tbsp cinnamon
Dough:
-
2 sticks unsalted butter
-
1 & 3/4 cup sugar
-
2 eggs
-
2 tsp vanilla extract
-
3 -3.5 cups flour
-
1 tsp baking soda
-
3/4 tsp salt
-
1.5 tsp cream of tartar
Instructions:
-
To make the filling, combine 6 tbsp butter, cinnamon, and brown sugar. Once mixed, form into small marbles and place on a pan to freeze.
-
While those are freezing, combine the butter, eggs, sugar, vanilla, baking soda, salt, cream of tartar, and flour. I recommend starting with 3 cups of flour and fully mixing before adding more.
-
Once the dough is formed, fold in cinnamon marbles.
-
In a separate bowl or plate, create a cinnamon sugar mixture to roll the dough through. Ball the dough into spoon-sized pieces and roll them through the mixture, then place on your cooking sheet.
-
Cook at 350°F for 10-12 minutes, or until golden brown.
