Mom’s Pumpkin Bars
Ingredients:
- 4 eggs
- 1 cup oil (vegetable or canola oil is best)
- 2 cups (or 1 can) pumpkin puree
- 2 cups flour
- 1 t. baking soda
- 1 t. salt
- 2 t. cinnamon
Preheat oven to 350 degrees.
Mix the above ingredients together and pour into a greased 11 x 17 cookie sheet (1” deep). A 13 x 9 cake pan is fine, also. The bars will be thicker.
Bake for 20 minutes. Cool completely.
Cream Cheese Icing
- 1 – 3 oz. cream cheese (softened)
- 1 – stick of unsalted butter (softened)
- 1 tsp. almond flavoring
- 2 cups powdered sugar
Mix completely, working out all lumps until smooth.
Spread over the cooled pumpkin.
Cut into bars.
Refrigerate unused bars.
