Orange Cookies - Penny Stine

Orange Cookies

Ingredients:

  • 1 cup butter

  • 2 cups sugar

  • 2 eggs

  • 1 cup buttermilk

  • 1 orange rind, zested, and the orange juice

  • 4-5 cups flour

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1 tsp baking soda

Frosting

  • 1/2 cup butter

  • 1 tsp vanilla

  • 1 orange - rind and juice

  • 3 1/2 cups powdered sugardash of salt cream butter and sugar together

Instructions:

  1. Add eggs and mix well.

  2. Dissolve the baking soda in the buttermilk

  3. Sift the dry ingredients together, and alternate adding the liquid ingredients (both the orange juice and the buttermilk) with the dry ingredients. The dough will be stiff.

  4. Drop by tablespoon (or teaspoon, if you prefer a smaller cookie) onto a cookie sheet that has been sprayed or use parchment paper. 

  5. Bake at 350 for 10-12 minutes.

  6. When cookies are completely cool, make the frosting and spread it generously over the cookies.
