Svenska Sockerkaka - Monica and Bruce Peers

Ingredients:

  • 2 3/4 Cup flour 
  • 2 cups sugar 
  • 1 teaspoon baking powder 
  • 1 1/3 teaspoon salt 

Mix the dry ingredients.

  • 1 Cup soft butter 
  • 1 1/3 Cup milk 
  • 4 beaten eggs 
  • Grated peel from 1 large lemon 

Instructions:

  1. Mix, grease, and flour two loaf pans. 
  2. Bake at 375 for 60-65 minutes or until fork comes out clean.  
  3. This cake is not frosted, but if you have access to Swedish Lingonberries, add them.
  4. Wow!!!
